Refined carbohydrates (e.g., refined grains, e.g. potatoes, and refined sugar) can significantly challenge a compromised gut.
This includes high blood pressure and type 2 diabetes. This leads to high levels of glucose in the bloodstream, even when refined sugar is entirely removed. This triggers excessive insulin release and generates harmful compounds called AGEs (Advanced Glycation End-products). In the gut, these carbohydrates can feed dysbiotic bacteria, contributing to gut lining damage (leaky gut) and allowing inflammatory agents to leak into the bloodstream. This gut inflammation further enlarges the junctions between gut cells, allowing pathogens like LPS (Lipopolysaccharide) and partially digested food particles to enter the bloodstream, driving chronic inflammation and accelerating the stiffening and narrowing of arteries. The question is, why didn’t we see this level of chronic illness decades ago? The answer is biological tipping points: decades of diet and stress created a cumulative burden that has now tipped the body into chronic disease. Once true remission is achieved, the gut may be robust enough to reintroduce certain foods (like well-prepared grains) over time. The critical point is that medication treats the symptoms (e.g., relaxing artery walls) but masks the root cause. While the body is still under stress, even if the drugs mask it.
